Ah Kong's birthday



A blueberry crispy crunch cake for Ah Kong's 82nd birthday. The bottom layer is chopped up crispy flakes and for the 2nd layer, I laid a luscious layer of blueberry embedded in rich chocolate ganache. The sides are frosted and coated with chocolate rasps.

Founder's Day





Baked for a school's founder's day. Its a fruit with vanilla cream cake. This is the same size as Gerard's ESC cake except that having gained the experience from doing that cake, this one was a whole lot easier to manage. I can say very much for the color combi tho'...got to work better on that. On the whole, a very satisfied one for me. (^^). Hope it was enuf for the staff and that they liked it....i may never get to know...oh well........

Golf


Gold design chocolate cake for boss who's into golfing. I used swirled sugar gummy to substitute for the flagpost as the earlier I did with paper just kept sliding down!

Black and White




Wil wanted a black and white cake for P because that's her favourite colours. So he suggested a black colored cake with three white flowers on it. I was excited about doing this cake...I like the idea as I had imagined that it would look stunning...white and black...STARK!

The inside of this cake is a white chocolate mousse. Doing the cake part was easy, but as the coating was supposed to be black, I had to 'crack' my mind on how to go about doing it. First I tried doing a ganache and using black colour but that did not work as it only turned grey! Then i thought why not use whipping cream and coloring it, that may work better. But atlas, no matter how much black color I added, I could only achieve a dark grey color, and that was after using up the whole bottle of black coloring! Yucks...the thought of chowing down all that coloring simply put me off. So eventually I settled for wafer sticks with dark cookie crumbs for the top. Sigh, that was as black as I could achieve. The best part of all was putting on the flowers and writing out the words in white. Yes, I was happy with the final look of it. Happy Birthday P.

AGM




This is by far the 'largest' cake I've ever done. Its for Gerard's ESC AGM held on 28 June 07, for a crowd of about 120 pax. It was also the 'toughest' cake to do as building the layers was challenge, being a large cake. This was not as tough as doing the logo. First I tried to enlarge the logo by it did not work as it would take 'forever' to do that. Finally, I decided to just enlarge by drawing the logo out manually, then reducing it using the photocopier.. that worked wonderfully, thanks to the suggestion from my kiddo. Well, I am proud to say I think the ESC came very close to the real thing that Gerard sent over, though I can't say the same for the smaller workings...I then used white chocolate to 'draw' out the logo..this was done over nights as I had to have a thick layer so that it would stand out on the cake..Finally, after three late nights (ahh finished at 2 am), I was satisfied with my work. On the night before collection date (28 Jun), I was assembling the design onto the cake. Horror of horror, some parts of the logo started to crack! I was soooo...upset. But I had no choice, so I had to transport the cracked pieces with chopstick onto the cake so that it did
break further. I was getting desparate as it was getting quite late and I still had to decorate the rest of the cake, so used more white chocolate to 'seal' the cracks to cover up. That worked pretty well and eventually I finished the cake. Phew! Hope everyone was pleased and more importantly, that everyone had a taste of it. Thanks Gerard.

Angie wanted a cute cake for Krissy's 1 yr old birthday celebration on 26 Apr 07. Chanced upon a very cute Strawberry picture, so decided to use it to make a cake for my chubby chummy Krissy's birthday. A simple vanilla cream cake as Angie wanted Krissy to be able to eat it.
